I am so excited to be sharing this gluten free mug cake recipe with you today! I wanted to create an easy gluten free mug cake recipe, so that everyone could enjoy it. Cinnamon rolls are amazing but take so much time, so try this mug cake and get the same taste. This recipe is intended to be no fuss and super easy!

This mug cake is one of my favourites and the texture is still super fluffy and delicious! I only tried this recipe using the below ingredients. Please know that if you try other ingredients it may not turn out the way it should.

This gluten free mug cake uses gluten free flour, with xanthan gum. So if you are not gluten free, you can substitute it all-purpose flour. Just make sure you use the same ratio as in the ingredients list.

Why Mug Cakes?

I often find that many of my readers want quick and easy dessert. This gluten free mug cake is just that! So many desserts out there require a long ingredients list, followed by a tedious method. This recipe is meant to be quick and easy, and who doesn’t love a quick dessert?!

The beauty about these gluten free mug cakes is that they require one bowl for mixing and two mugs, and that’s it. You can add peanut butter, nuts, nutella etc in the filling if you wish. They can be customised to your liking.

What fillings can I add to my gluten free mug cakes?

  1. One scoop of peanut butter, in between the batter of the mug cake will be delicious.
  2. I love add a dollop of Nutella in mine.
  3. Ice cream is a great one to add once it’s done baking and adds even more decadence.
  4. Chopped nuts can be added as well, just make sure they are swirled in the batter once it’s done.

This gluten free mug cake is here to solve your dessert needs in seconds!

Ingredients

  • 2 tbsp. coconut oil, melted

  • 4 tbsp. milk

  • 1 egg

  • 1 tsp. cinnamon powder

  • 2 tbsp. caster sugar

  • 1/4 cup gluten free flour

  • 1/4 cup oat flour

  • 1/4 tsp. baking powder

  • Cinnamon glaze:

  • 3 tbsp. softened butter

  • 1 1/2 tsp. cinnamon powder

  • 2 tsp. brown sugar

  • 2 tsp. Nutella (optional but definitely try it)

Directions

  • Whisk together the coconut oil, egg and milk in a small bowl, until combined.
  • Then add in the caster sugar and whisk for 2-3 minutes until its combined.
  • Then add in the rest of the dry ingredients.
  • Divide the batter equally between two microwave safe mugs.
  • Using a fork, mix together the cinnamon glaze ingredients, and put into a piping bag or using a spoon drizzle it over the top of the mug cake.
  • Place in a microwave for 40 seconds to 1 minute. I take mine out at 45 seconds because I like a gooey center, but if you want yours more firm, leave it in for one minute plus 10 seconds.
  • Drizzle with more Nutella if you like and enjoy!

Notes

  • Try not to leave the mug cake in the microwave for too long as it will dry out the cake.
  • Bake one mug cake at a time to ensure baking has occurred throughout the mug.
  • I use microwave safe ramekins but you can use any mug side you like.
