Brownies have always been one of the best comfort foods ever. This is all to say that chocolate certainly does make the soul happy. To make the best pretzel brownies ever I had to test this recipe a few times. I wanted the consistency to be just right and certainly not too difficult to make. These brownies have a wonderful thick and fudgy consistency, so they are not too dry or firm. I added chocolate coated pretzels on top but truthfully you can add any type of pretzels you like. Why should I add egg yolks to my brownies?

Adding eggs to your brownie batter helps the dry ingredients combine with the butter. The eggs really create that extra fudgy, soft filling that we all love. Adding an extra egg yolks makes the brownies ever more fudgy, hence why I added an extra one to my recipe.

How to achieve the best pretzel brownies ever?

This recipe does not call for a lot of flour, so the wet ingredients outweigh the dry significantly. This helps to create that soft and runny batter we love and while baking, there isn’t enough flour to firm/dry up the batter too much.

You will find that we add chocolate twice in this recipe. I feel that adding more chocolate and less cocoa powder gives more of an authentic chocolate taste and adds to that soft texture. I suggest using Lindt 70% Dark Chocolate when melting with the butter. The chocolate chips can be baking chocolate chips and don’t need to necessarily be a very expensive brand. However, I do feel that adding a good quality chocolate does enhance the flavour and texture of the brownies.

How to store the brownies?

I like to place mine in an airtight container once they have cooled to room temperature. Thereafter, I place them in the fridge for up to five days. They tend to get very hard after that. If you find them to be a bit dry, pop them in the microwave for 10 seconds.

Ingredients

  • 130g 70% Dark Chocolate

  • 1 cup butter, salted or unsalted

  • 1/2 cup cocoa powder, sieved

  • 3/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 3 large eggs

  • 1 egg yolk

  • 2 tsp. vanilla essence

  • 3/4 cup plain flour

  • 3/4 cup chocolate chips

  • 1 cup pretzels

Directions

  • Preheat the oven to 175C and line a 9×9 inch baking tin and set aside for now.
  • In a bowl, melt the chocolate and butter in the microwave, stirring every 10 seconds so the mixture doesn’t burn.
  • Whisk in the sieved cocoa powder.
  • Add the sugar and whisk by hand for about 2-4 minutes or use an electric whisk to combine the sugars and the chocolate mixture.
  • Once that is done, add in the eggs and egg yolks. Whisk for 5 minutes on a high speed if possible (you can use a stand mixer for this). There shouldn’t be many sugar granules and the mixture should appear quite smooth.
  • Add in the vanilla essence and then flour and use a spatula to combine.
  • Lastly add in the chocolate chips and fold.
  • Pour the batter into the prepared baking dish, top with pretzels and bake for 25-30 minutes.
  • Allow the brownies to set for 20 minutes before cutting and enjoy!
