I really enjoy making my salads but sometimes the process does get a bit monotonous. When you keep using the same olive oil and balsamic combination and it just gets boring. I haven’t added many savoury recipes to the blog in a long time so this is the debut of that! We are starting off with the best cashew nut dressing for salads. This recipe is very easy and all you really need is a good blender to combine all the ingredients.

Starting with savoury recipes on my blog is something I have wanted to do for a long time. How to achieve the best cashew but nut dressing for salads

This recipe was designed to be used as a salad dressing but I love using it as a steak sauce too. The beauty about a recipe like this is that there are many ways you can enjoy it. The best way to make this Low FODMAP dressing is to use fresh and ripe ingredients. If something has been in your fridge too long, I would suggest that you don’t use it for this recipe. I used fresh basil and spinach from my garden, you can use any type of basil and spinach you like.

If your lettuce is a bit wilted, put it in ice cold water with ice blocks for 10 minutes. This will revive your lettuce and give you that amazing crunch.

Because this recipe is Low FODMAP, I omitted garlic and used nutritional yeast instead. If you would like garlic in yours, please add 2-3 cloves.

How to store the cashew nut dressing?

Once I’ve used the dressing I need for my immediate salad/meal, I place the rest in a glass container. make sure the lid is tightly sealed, place it in the fridge until you need it again. It will keep for up to 5 days.

if you want to spice up your salads, or even add a new sauce to your steaks and chicken, this dressing is perfect. It’s very multi-purpose and has a lovely fresh taste to it. The greens make it very healthy and it makes your salad juicy and refreshing all at the same time.

Ingredients

  • Vegan Cashew Nut Dressing
  • 1 cup of cashew nut-unsalted

  • 1/3 cup of water

  • 1/2 cup of fresh basil leaves

  • 1/3 cup fresh coriander leaves

  • 1 1/2 cup fresh spinach leaves/ 3 medium spinach leaves

  • 1 1/2 tsp. salt

  • 3 tbsp. olive oil

  • 1 tbsp. nutritional yeast

  • 1 tsp. onion powder

Directions

  • Submerge your cashew nuts in water for 10 minutes so they can soften.
  • Strain out the water and place the cashew nuts and all the above ingredients in a food processor and blitz until smooth.
  • Pour over salads, any protein you like and enjoy!
