A divine Strawberry Marshmallow Mousse recipe

I have a tendency to overbuy fruits and not check my fridge when shopping. This leads to me having doubles of a few things. But not to worry I always find a fun way to not waste and make something yummy. I have about two punnets of strawberries and needed to use them before they went off. Today I am going to show you How Make Strawberry Marshmallow Mousse from scratch. It really is a lot easier than you think and very similar to the way we make any other mousse. I never thought to add marshmallows to a mousse but it really does bring a fluffy texture to the whole recipe.

I thought that maybe adding the marshmallows would make this recipe too sweet, but alas it is not. The strawberry mixture we make at the beginning cuts into the sweetness beautifully. And this leaves you wanting more and more! I hope you enjoy this recipe, it is perfect for those warm, Summer nights but I am loving it now as well.

How long do I have to wait before it’s set?

When you are learning how to make this strawberry marshmallow mousse, remember that it does have a setting time. I would say that the recommended 2-3 hours is ideal for this recipe. If you don’t wait and you find yourself in a rush, remember that it will be a bit liquid in texture. I have not tried adding corn starch to make it set faster. But you can try this if you are in a hurry.

How to store these mousse cups?

I would suggest dishing them out into glass cups if you have some. Then place them in the fridge, you do not have to cover the tops with cling film yet. Once they are set, add the strawberry garnish. If you don’t want to eat them right away, cover with cling film and leave them in the fridge. They will last up to 4 days in the fridge.

How To Make Strawberry Marshmallow Mousse

Ingredients

  • Strawberry Garnish
  • 1 cup strawberries, cleaned and chops into cubes

  • 1 tbsp. sugar

  • 1 tbsp. mint leaves

  • Strawberry Mousse
  • 1 cup strawberries, cleaned and cut

  • 1/4 cup water

  • 1 tbsp. granulated sugar

  • 1/2 tsp. lemon juice

  • 1/2 tsp. lemon zest

  • 110g marshmallows (mini’s/cut the big ones if that’s all you have)

  • 1 cup whipping cream

Directions

  • Strawberry garnish
  • In a small bowl combine the strawberries, sugar and mint leaves and set aside. The strawberries will eventually absorb the flavours from the mint and sugar.
  • Strawberry mousse
  • Roughly chop the strawberries and add them to a small saucepan.
  • Add in the sugar, water, lemon juice and zest and mix well.
  • Place on the stove on a medium heat.
  • Let it come to a light boil and cook for 3-5 minutes.
  • Use a hand blender to blend the strawberries.
  • Then remove from the heat, add in the marshmallows and stir.
  • The marshmallows should melt in, but if they don’t, then blend as well to make sure the mixture is smooth.
  • Whip the cream until it reaches soft to medium peaks.
  • Add 1/3 of the whipped cream to the cooled down strawberry mixture and fold it in.
  • Then add the rest of the cream in. Folding it gently.
  • Place the mousse in cups, refrigerate for 2-3 hours and then top with the garnish when you’re ready to serve and enjoy!
