When I buy bread rolls, more often than not, I am disappointed by the quality. I want a something that is light and fluffy but also not dry and holds its shape. I am so excited to share this recipe on how to make fluffy milk bread rolls because they are life changing. The main difference is that they are made with evaporated milk and condensed milk. These two products have a higher fat content therefore providing us with a softer and more fluffy bread roll.

This is a very easy to follow recipe and I wanted to share one that everyone can make. Attempting bread recipes can seem very daunting. I am one of those people who finds it very intimidating so I like to try my hand at easier recipes first. This is great if you are starting out your bread making journey because it doesn’t contain any starters, like sourdough bread. I hope you love this recipe as much as I do. How to make this recipe by hand

I chose to make this recipe using a stand mixer with a dough hook attachment. However, you can make this recipe by hand as well. I would put all the ingredients into one bowl and stir with a wooden spoon. Once the dough seems to be coming together, you can turn it out onto a clean surface. From here you can start kneading the dough for about 10 minutes. The dough should be soft and smooth, thereafter, leave it in a warm place to rise.

Why is my dough not rising?

My dough didn’t rise on the first try, and this is part of the trial and error process. Make sure to check the expiry date of your ingredients. Sometimes your flour or yeast can be expired and therefore, there is no active agent to help the rising process. If this is the case, you will have to start again unfortunately.

If you are experiencing very cold weather, I would suggest preheating your oven to 50C for 5-7 minutes. Turn off the heat and when you are ready places the dough (covered) inside. This will facilitate the rising process in a warm area and it will go faster. I am currently experiencing a harsh winter in Cape Town, so the dough took double the time to rise. This recipe says 1 hour, but I think you should give the dough close to 2 hours on colder days.

Ingredients

  • 250ml evaporated milk

  • 65g sweetened condensed milk

  • 1 large egg

  • 370g plain flour

  • 7-10g active yeast

  • 2 tbsp. sugar

  • 50g softened butter

Directions

  • In a large bowl or stand mixer, combine the evaporated milk, condensed milk and egg and whisk to combine using a handheld whisk or whisk attachment.
  • Switch the attachment to a dough hook and add in the rest of the ingredients.
  • The dough will start to come together, mix for about 4-5 minutes. Once the dough pulls away from the sides, you can let it rest for 20 minutes in a warm place. It won’t rise too much but this will soften it.
  • Put the dough back in the stand mixer and add the butter while the machine is on. Add the butter in stages, once the one piece is absorbed in, add the next and so on.
  • The mixture will look very sweet and tacky, but trust the process. Keep mixing until all the butter is gone and the dough is soft and smooth.
  • Allow the dough to rest for 1h30 minutes, maybe longer in colder weather.
  • Once the dough is ready, divide into 123 equals balls.
  • Place in a baking tray and cover and allow to rise again for 30 minutes. At this point you can preheat your oven to 165C.
  • Dust with some excess flour and bake in the oven for 16-20 minutes at 165C.
  • Remove from the oven and enjoy warm!
