How To Make Eggless Chocolate Mousse

A delicious eggless chocolate mousse story

Whenever I look at chocolate mousse recipes, they always seem to contain egg in some way or form. Now, not to bash eggs and the protein they provide, but sometimes it just complicates a simple recipe. I understand that the egg whites will provide a very fluffy and light mousse but I just don’t think it’s necessary for quick recipes. I created this post on how to make eggless chocolate mousse, so that it’s very clear there are no eggs!

This simple recipe contains 4 main ingredients to achieve a lush and creamy chocolate mousse. I used dark chocolate for this recipe, however, if you like milk chocolate that is fine too. Because the recipe does not contain much sugar, I would say it is “sugar-friendly”. So if you are someone who is avoiding too much sugar, this isn’t a terrible option. Please let me know if you do try this recipe, I really love it! It is a small batch recipe, so it makes three cups. If you would like to have a large batch, simply double the recipe.

The chocolate consistency looks like it seized?

There is a part in the recipe where it looks like your’e about to make a chocolate ganache. Now, when we do make chocolate ganache the consistency is very runny but a bit thick due to the cream. Because we are adding the cream and chocolate together and melting it, this may look different. The chocolate mixture will seem rather oily and almost clump together. For example, if you run your spatula through it, it may seem like it just slides off. This is totally normal, once you add it to the whipped cream in stages, it does come together very well. So do not fret!

How to store your chocolate mousse?

Once you have poured your mixture into the various cups or glasses, it will be refrigerated for at least 1 hour 30 minutes. If you do not intend to eat it right away, I would suggest covering each glass with cling film, tightly. The mousse should keep for up to four days. Allow it come to room temperature before enjoying it so it won’t be too cold.

This delicious chocolate mousse recipe contains no eggs and is such a quick recipe for Summer. A chocolate lover’s dream comes together in these small pots of happiness, filled with chocolate and whipped cream on top.

Ingredients

  • 120g dark chocolate (I used Lindt 70% cocoa)

  • 1 1/4 cup heavy whipping cream

  • 1/4 tsp. hot chocolate powder

  • 2 tbsp. powder/icing sugar

  • 1 tsp. corn starch

  • Extra whipping cream for the garnish

Directions

  • Chop the chocolate roughly if you are using a bar of chocolate.
  • Add the chocolate and 1/2 cup of cream to a small pot.
  • On a low heat, melt everything together while stirring, this should take 5-7 minutes. Once everything is melted, remove form the stove and keep stirring. If the chocolate seizes a bit, that’s okay.
  • Now in a stand mixer or hand held electric whisk, whisk the rest of the cream until it reaches soft peaks.
  • Then add in the powdered sugar and cornstarch (sieved) and whisk on medium until you reach stiff peaks.
  • Add in the chocolate (it should be slightly cooled) in two stages.
  • Fold it in using a spatula each time, if there are white streaks, that’s fine.
  • Place in your glasses and refrigerate for up to two hours to allow it to set.
  • When you are ready to serve, top with whipped cream and grated chocolate.
