Birthday Pancakes Should Be A Thing!
I have been craving something sweet and fun lately and these pancakes are just the thing! Funfetti Gluten-Free Pancakes should be on everyone’s recipe list. I love how fluffy they came out and the texture is unreal! If you are not a confetti fan (why, though?) you can always add any substitutes you like. I love adding in blueberries and chocolate chips and they work wonderfully.
During lockdown I think these are a great way to celebrate anyone’s birthday. They are so happy and just give that birthday feeling as soon as you make them. I topped mine with whipped cream to be a bit extra and it was delicious!
Breakfast doesn’t have to be boring with the funfetti gluten-free pancakes. If you are looking for a great dessert for friends, this is also a great idea!

Let’s talk Funfetti Gluten-Free Pancakes Ingredients:
Gluten Free Flour: I chose to use a gluten-free flour blend that contains Xanthan Gum. If your four does not contain Xanthan Gum, please do add in. The Xanthan Gum helps to combine the ingredients together.
Melted Butter: I like to make sure my butter has cooled for about 3 minutes before adding it to my wet ingredients. The butter gives the pancakes a nice smooth texture.
Sugar: I added in some brown sugar to give it some sweetness. You can always add in granulated sugar if you prefer.
Funfetti: These are colourful sprinkles that I’ve added to my pancakes. They add a lovely pop of colour and don’t add any flavour to the pancake really. That’s why I added some sugar for sweetness.
Extra Butter: I like to keep extra butter on the side to use for frying. You can also use a non-grease spray if you prefer.

Ingredients
3 tbsp. brown sugar
1 cup gluten-free flour
1/3 tsp. Xanthan Gum (if your flour doesn’t contain it)
1 egg
3 tbsp. melted butter
1/2 cup milk/non-fat milk
1 tsp. vanilla essence
3 heaped tsp. baking powder
1/2 cup funfetti
Directions
- In a bowl, whisk together the brown sugar, gluten-free flour and baking powder and set aside.
- Combine the melted butter, egg, vanilla essence and milk. Whisk in a bowl and slowly combine to the dry ingredients.
- Once everything is combined, add in half of the funfetti. Leave the rest aside to sprinkle on the pancake while it is cooking.
- Heat extra butter in a pan or use non-grease spray and fry off one pancake at a time.
- Once the pancakes are ready, stack them up and add whipped cream on top.
