I am not even exaggerating, they really are the best brownies I have ever made. These fudgy, crinkled chocolate brownies are the best I’ve tried yet! Trust me they do not disappoint. If you’re in the mood for fudgy crinkle chocolate brownies, you have come to the right place. I find that having a balance between a gooey brownie and a firm one is key.

What you need to make these fudgy crinkled chocolate brownies

The baking tin is very important. I find that if you use one too large the brownies come out flat and thin. The baking tin I used is 27cm x 26cm x 5cm, if you can’t find one exactly the same, look for one that is similar. These give you a nice thick brownie, without it being too much.

For this recipe, I used 70% cocoa, dark chocolate. I feel like Lindt is the way to go, but if you have another great quality dark chocolate, by all means use that. A good quality chocolate is vital to making a great brownie. It affects everything so don’t add in milk chocolate, it will definitely not come out the same.

In this fudgy crinkle chocolate brownie recipe I used vanilla pods, but you can use vanilla essence. I added almond essence as well, which really added to the flavour.

Make sure that your eggs and butter are room temperature. Room temperature butter helps it melt faster and brown quicker.

Use a good quality cocoa powder. I used Dutch processed cocoa powder, and I find it works great for all my chocolate recipes.

Storage:

I like to store my brownies in an air tight container once they have completely cooled down. Start by lining the container with parchment paper and place them in the fridge. I keep mine for just over a week, thereafter they become very hard, so I wouldn’t recommend that.

These decadent chocolate brownies are too good to be true! I love that they have a soft and fudgy centre, while also having a great crinkle top!

Ingredients

  • 230g butter, browned

  • 200g dark chocolate

  • 2 tsp. vanilla essence/2 pods

  • 1 tsp. almond essence

  • 1/4 cup Dutch processed cocoa powder

  • 3 eggs, room temp.

  • 1 1/2 cups + 2 tsp. granulated sugar

  • 1 cup all purpose flour

Directions

  • Preheat your oven to 165C, and line your baking tin with parchment paper and spray with a grease proof spray.
  • Place the butter in a medium sized pot and set the heat to medium-high.
  • Continuously stirring the butter until it becomes a light brown. There will be foam bubbling up, but as you stir it will come down.
  • Once the butter has reached a golden brown colour, remove it from the heat and stir in the chocolate, cocoa powder, vanilla essence and almond essence.
  • Allow it to cool for a bit, roughly 5-8 minutes.
  • In the meantime beat your eggs and sugar together until they look light and creamy.
  • Remember to scrap down the sides of the bowl 1-2 times.
  • When the chocolate mixture has cooled down, slowly pour it in a steady stream, into the eggs and butter.
  • The chocolate shouldn’t be too hot, otherwise it will cook the egg.
  • Scrape down the sides and mix with a paddle attachment for 3 minutes.
  • Then add in the flour and make sure everything is incorporated well.
  • Pour the batter into your baking tin, smooth down the top with a spatula or the back of a spoon.
  • Bake your brownies for 40-45 minutes. Insert a toothpick to check that they’re done.
  • Allow them to cool down completely for the crinkle tops to come alive.

  2. Hi, if I don’t have a paddle attachment and using a regular electric hand mixer what can I do?

      Hello!
      If you are doing this by hand, use a good hand whisk and just whisk for about 3-5 minutes.
      You will achieve the same consistency, but it will take a few minutes longer.
