These easy double chocolate fudge crumbl cookies. I wanted something that had chocolate and a very light crumb. I have tried a few and they are decadent and sweeter and this recipe is no exception. Crumbl cookies have recently just hit the scene! The famous Instagram account of this famous cookie has created a massive trend to foodies and influencers alike. To give you some detail, the crumbl cookie is a soft and buttery cookie and literally crumbles in each bite. It is quite literally the opposite of the traditional chocolate chip cookie. The texture is very light, soft and it breaks easily. The cookie itself isn’t too sweet, that’s why adding the frosting really makes the cookie.Any flavour can be added to the cookie and the frosting. For this recipe I made a cream cheese chocolate frosting.

Tips for these easy double chocolate fudge crumbl cookies:

This recipe is very easy to follow and it’s your standard “add wet to dry ingredients” method. One of the main crucial ingredients in this recipe is cream of tartar. The role of cream of tartar is to prevent crystallisation, which provides a very soft cookie.

  1. Ideally if you can use a stand mixer, I would suggest you do. The mixing of the butter and sugars is very important. You need to attain a very creamy and soft mixture. I like to keep my speed at a medium pace and continuously scrape down the bowl to make sure everything is incorporated.
  2. I used normal light brown sugar for this recipe, not packed brown sugar.
  3. For most cookie recipes you can just ice-cream scoop the batter on to the tray. For a crumbl cookie you ned to flatten the cookie in order for it to cook through. With regards to this recipe, I used the back of a cup to flatten it out to 1/2 inch thickness.
  4. After you remove your cookies from the oven, allow them to cool completely. Once they are cooled, you can apply your frosting with a spoon or piping bag.

If you love soft and crumbly cookies, you are going to love these easy double chocolate fudge crumbl cookies. The cookie is very light, and not too sweet. The chocolate fudge frosting is delicious and adds a decadent flavour to this recipe.

Ingredients

  • 220g butter, room temperature

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg plus 1 egg yolk

  • 2 tsp. vanilla essence

  • 3 cups. All purpose flour

  • 1/3 tsp. cream of tartar

  • 2 tbsp. corn starch

  • 2 tsp. cinnamon powder

  • 1/2 cup. cocoa powder

  • 1 tsp. baking powder

  • 1/4 tsp. salt

  • Chocolate Fudge Frosting
  • 1/2 cup dark chocolate chips

  • 110g salted butter, room temperature

  • 2 tbsp. plain cream cheese

  • 1 1/4 cups icing sugar/powdered sugar

  • 1 tsp. vanilla essence

  • 2 tbsp. cocoa powder

Directions

  • Preheat your oven to 350F/176C, line a baking tray with parchment paper and set aside for now.
  • In a stand mixer combine the butter and sugar and mix well with the creaming tool attachment.
  • Make sure to scrape down the sides of the bowl and cream until it looks light and creamy.
  • Then add in the egg and egg yolk, one by one. Mix in between each inclusion. Then add the vanilla.
  • In a separate bowl, whisk together the flour, cream of tartar, corn starch, cinnamon powder, salt, cocoa powder and baking powder.
  • Then add it to the mixer in two inclusions, while scraping down the bowl each time.
  • Mix until combined and there are no flour lumps.
  • Then scoop a tablespoon of batter out, roll it in between your hands to achieve a round ball.
  • Then use the back of a cup and flatten to about 1/2 inch, you can also flatten with your hands.
  • Bake in the oven for 7-9 minutes. Allow them to cool completely.
  • Chocolate Fudge Frosting
  • Melt your chocolate in the microwave and allow to cool.
  • In a stand mixer or a using a whisk, mix your butter, cream cheese and vanilla essence together until creamy.
  • Then add in the sifted icing sugar and cocoa powder.
  • Finally pour in the melted chocolate and continue mixing.
  • Pipe on to the crumb cookie or spoon, and enjoy!
