How to make delicious easy bake oatmeal cookie recipe

I have been craving a chewy oatmeal cookie for ages! Today I decided to make my own delicious easy bake oatmeal cookie recipe, and share with with you. This recipe is super easy and everything can be made in own bowl. I love how chewy oats can make a cookie. Sometimes a chewy cookie is just preferred and they do taste incredible as well. When it comes to a cookie recipe, I always add in chocolate chips. However, for this recipe, I chopped up milk chocolate, and I find it really has a better flavour.

The trick to making a really chewy and nutty flavoured cookie, is the browning of the butter. When you brown butter it brings out nutty based flavours and this really adds to the flavour of the cookie. Of course, if you choose not to do so, that is totally fine. Your cookie may not be as chewy but it will definitely still be delicious. This is one of my favourite recipes and I hope you love it as much as I do.

Why do I need to refrigerate my easy bake oatmeal cookies?

The reason we chill our cookie batter in the fridge for a while is to allow the fats (butter/shortening) to cool down. This process also allows the flours to fully hydrate which creates a firmer cookie dough. A firmer cookie dough allows the the cookie to also holds its shape while baking. If you skip this step, the ingredients wouldn’t have had a chance to fully hydrate, therefore, causing a flat, crunchy cookie. Whenever you have a cookie that just snaps as soon as you bite it and it’s quite hard, that’s because it has not chilled enough. This delicious easy bake oatmeal cookie recipe calls for chill time, which results in a lovely chewy cookie.

Why brown the butter?

This is a very simple answer, it adds more flavour. If you like a more nutty, butterscotch-like flavour in your cookies, you have to try this method! It is such a simple step that really adds to the flavour of the cookie. It does not matter which cookie recipe you choose to make. If you measure out the butter and then brown it, it will enhance the flavour tremendously.

How to store your easy bake oatmeal cookies?

Place the cooled cookies in an airtight container and they can sit on the counter top for up to 10 days. They do not need to be refrigerated. if they feel a bit tough to bite into, microwave them for 5 seconds and enjoy!

These are thee best easy bake chocolate chip oatmeal cookies. They are perfectly chewy and it has a subtle hint of that nutty flavour coming through from the browned butter. You are going to love these!

Ingredients

  • 210g salted butter measure out, and then browned.

  • 190g light brown sugar

  • 2 large eggs

  • 1 tsp. vanilla extract

  • 200g all purpose flour

  • 150g rolled oats

  • 1 tsp. baking soda

  • 1/2 cup milk chocolate chips
    1/3 cup white chocolate chips for garnish before baking

Directions

  • First start by browning your butter, set it aside for it to cool for 10 minutes.
  • In a medium sized bowl, whisk together the flour, oats and baking soda.
  • In a large bowl, add your browned butter, eggs light brown sugar and vanilla and whisk well.
  • The mixture should turn a golden brown colour and become thick in consistency- whisk for about 3 minutes by hand.
  • Then fold in (with a rubber spatula) the dry ingredients.
  • Once all of that is combined add in the milk chocolate chips.
  • Place the batter int he fridge with a light tea towel covering it for 25 minutes.
  • After 15 minutes, preheat your oven to 175C.
  • Line a large baking tray with parchment paper and spray with a non-stick spray, lightly.
  • Scoop two tablespoons of the batter and create a round ball.
  • Place it on the baking sheet and light press down so they are a bit flat, they should be about 1cm thick. Top with white chocolate chips.
  • Bake in the oven for 12 minutes. Once the edges are golden brown, they are ready.
  • If you make bigger cookies, add 1-2 minutes baking time.
  • Remove from the oven and enjoy!
