Banana Bread Made Easy

The lockdown favourite is back!

I love baking banana bread, I find it therapeutic and calming. This easy bake banana bread is perfect for a simply baking day. Sometimes we want a quick and easy recipe to just satisfy that sweet tooth we have. I remember baking this loaf constantly during lockdown. It is such a fan favourite and a recipe that I could basically live off. If you have overripe or spotty bananas, don’t throw them away, make this easy bake banana bread. How to make this Easy Bake Banana Bread:

The first thing you need to consider is your bananas. I like to use bananas that are very spotty and almost 60% dark in colour. By using overripe bananas, you are giving your banana bread natural sugars. This creates a sweet taste, without having to add much sugar the recipe at all. Make sure to use brown sugar for this recipe and try not to substitute it with granulated sugar. The granulated sugar will create more crispy edges and possibly a slightly drier banana bread.

What size tin should I use?

Using a loaf tin that is too large could result in a flat loaf. The entire recipe could be perfect but the wrong loaf tin could make you think that something is wrong with the recipe. The loaf tin I use is a Le Creuset 23cm loaf tin. This gave me a good rise, while not tampering with the recipe at all. I like to line the loaf tin with a piece of parchment paper. The parchment paper should be cut to the width of the loaf, so it can fit nicely and come up the edges if possible. This will help with removing the banana bread from the tin when it’s done.

Banana Bread Made Easy: Storage and Cooling

Make sure that your loaf stays in the tin after coming out the oven for at least 15 minutes. Then gently remove the loaf and place it on a cooling rack before storing. If you re going to store it, place it in an airtight container, or cover the loaf in foil. This loaf can store for up to one week, reheat it and add a blob of butter for more decadence.

Reintroducing this easy bake banana bread. This was a definite lockdown favourite for me and for obvious reasons! This banana bread is moist and full of chocolate chips, with added hint of orange. This is a two bowl recipe, so it is truly not a difficult recipe to create.

Ingredients

  • 1 1/2 cups of cake flour

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1 tsp. cinnamon powder

  • 3 medium overripe bananas

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 tsp. vanilla essence

  • 1/2 orange zest

  • 1/4 cup melted butter

  • 1 cup chocolate chips

Directions

  • Preheat your oven to 350F/176C.
  • Line your baking loaf tin with parchment paper and set aside.
  • In a medium sized bowl, combine your flour, baking powder, cinnamon powder and baking soda.
  • Whisk well to combine.
  • Then in another bowl, mash your bananas, add in the eggs, one a time and whisk.
  • Then add the brown sugar and whisk for 2 minutes.
  • Add in the vanilla essence, orange zest, melted butter and chocolate chips.
  • Mix well with a whisk and then add the wet ingredients to the dry and combine well.
  • Place in the loaf tin and bake for 55-60 minutes. It may take a bit longer depending on your oven, to check at 45 minutes and go from there. Sometimes mine has ti stay in the oven for 70 minutes, so just keep and eye on it.
  • Once done, remove from the oven and allow to cool.
