Another day, another recipe!
The holiday vibes are here and I had to bring the sweetness with my best cookie skillet recipe. This cookie skillet makes me feel like I’m eating a s’mores cookie. And I have to say it does not disappoint! This cookies skillet is filled with chocolate chips and marshmallows for extra flavour. So trust me when I say, it makes the cookie that much softer and delicious.
It’s a really busy day for me, trying to round up this work year so I am going to spare you a long and drawn out blog post. However I will still give you some tips to get the perfect cookie skillet. I will be posting 1-2 more recipes over the next two days, so definitely check in to see if there is anything you want to make for Christmas or over the holiday season.
My best cookie skillet tips:
- The recipe says bake the cookie skillet for 20-25 minutes. However, I would suggest that you check on it from 18 minutes. You don’t want a hard cookie, so rather take it out earlier if you feel that
- It’s tough to add marshmallows to the centre as the cookie dough is quite tough. I added mine on top and you can add as many as you like.
- For storage, I would suggest cutting the cookie up and storing it in a container. When you reheat, try to use a microwave. As an oven reheat will bake the cookie more and create a hardened cookie texture.
- When you are mixing the dough, make sure to not over mix. This will create a hard dough and it’s really hard to come back from this.

The Best Cookie Skillet

minutesDig into this GLORIOUS cookie skillet that is covered with chocolate chips and marshmallows. We love a good s’mores recipe and this one is for the books!
Ingredients
1/2 cup butter
1/3 cup granulated sugar
3/4 cup brown sugar
1 tsp. vanilla extract
1 cup plain flour
3/4 cup self raising flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup mini marshmallows
1 cup chocolate chips
Vanilla ice cream for serving
Directions
- Preheat your oven to 180C.
- In a large bowl, cream together the butter (softened) and sugar until light and fluffy.
- Add in the egg and vanilla and combine.
- In a separate bowl, whisk together the flours, baking soda and salt and then add it in two inclusions to the butter mixture. Mix until just combined.
- Fold in half the marshmallows and chocolate chips.
- In a oven safe skillet, press the dough into the skillet, lightly and making sure it spreads evenly to the sides. Top with extra marshmallows and chocolate chips.
- Bake in the oven for 20-25 minutes. Once the edges are golden brown, remove form the oven and allow to cool.
- Serve with ice cream and enjoy!
