I love quite a few of the Starbucks bakes and treat that they have in their stores. I find them to be really good actually! Some people might think that because it’s a franchised coffee shop that the food won’t be that good. But honestly, you need to try it before you knock it. This is the best lemon loaf I have made in the longest time. Now if you love lemon loaf you have to learn how to make the Starbucks lemon loaf! It’s such a moist crumb, it has the softest texture and has just enough lemon in it!
I love desserts with a hint of lemon or orange, I feel like it cuts the sweetness at just the right point. This recipe calls for real lemon juice and lemon zest and it makes such a difference in flavour. Obviously the easier thing to do will be to use store bought lemon juice. But this won’t be as fruitful (pun intended). I have tried this recipe a few times and I am 100% sure that those of you who love lemon flavoured desserts, are going to love this. Does the loaf tin make a difference?
The simple answer is, yes it does. Over the years I always wondered why my baked loaves never became as tall as everyone else’s. You know what I mean, like I used the recipe exactly and still my loaf was quite flat. large part of this is that you aren’t using the correct size tin. Here are the tin’s I would recommend for this “How to make the Starbucks lemon loaf” and if you can find ones close to these sizes you are well on your way!
The two types of tins to use:
- 13cm x 28cm
- 22cm x 12cm
A few things to remember while making the “How to make Starbucks lemon loaf”
- Make sure you eggs are at room temperature. Cold eggs can re-harden fats in other ingredients resulting in a very dense texture and not much rise in the overall recipe.
- Use fresh lemons if you can! It does enhance the flavour but if you don’t have any, don’t stress.
- Make sure to sift the dry ingredients, this removes any lumps that will be in the batter. If you don’t the lumps won’t blend correctly resulting in dense parts in the loaf when you bite into it.

minutesThe best copy Starbucks lemon loaf recipe ever. This is by far the best lemon loaf I have ever tried! The texture is incredibly fluffy and soft, just what you want in a loaf cake. I added a very light icing to it which also has a light lemon flavour to it.
Ingredients
- Lemon Loaf
1 cup whole milk
1 tbsp. white vinegar
1/2 cup lemon juice, freshly squeezed ideally
2-3 tbsp. lemon zest
3/4 cup vegetable oil
1/2 tsp. vanilla essence
2 eggs
1 1/2 cup granulated sugar
2 cups flour, sifted
1 tsp. baking powder
- Frosting
1 1/2 cups icing sugar, sifted
2-3 tbsp lemon juice
Directions
- Lemon Loaf
- Preheat your oven to 160C with fan and line your standard loaf tin with parchment paper.
- In a small bowl, mix together the milk and vinegar and set aside for 5 minutes
- In a large bowl, combine the lemon juice, zest, eggs, vanilla and oil and whisk to combine.
- Then add in the sugar and whisk again.
- Add the milk and vinegar mixture to the wet ingredients and stir.
- Lastly, sift in the flour and baking powder.
- Pour your batter into the prepared tin and bake for 50-70 minutes (depending on what size tin you use). When a toothpick comes out clean and the top of the loaf no longer jiggles, remove from the oven.
- Allow to cool completely before adding the frosting.
- Frosting
- Sift the icing sugar to remove lumps.
- Pour in the lemon juice, 1 tablespoon at a time.
- When you reach the consistency you want you can drizzle it over the cooled loaf.
- Enjoy!
