My tips on how to make classic crêpes:

  1. I like to use a non-stick pan to make crêpes. I find that if I use a steel pan, no matter how much butter I use, it will stick and really ruin the crêpes.
  2. Do not forget to let the batter sit for 10 minutes. This helps to naturally thicken the mixture, without having to add in more flour.
  3. I always add in about 2 tablespoon of melted butter to the batter. I find that it makes the crêpes super soft and silky.
  4. When you start frying your crêpes, most people use butter but you can use a non-stick spray if you want to. I suggested butter as it really adds richness and flavour to the crêpe.
  5. A rubber spatula is the best tool for flipping crêpes because they are so thin and fragile.

What if I have left over mixture?

If I have left over mixture or if you’ve made a double batch, place the batter in an air tight container and refrigerate for up to two days. When you are ready to fry them off, give the batter a good whisk and fry as usual.
