I’m going to show you how to make a side dish that will devour any other side dish! Growing up with an Indian mother, we could expect so much from the kitchen. Her meals were always spectacular in taste and flavour and just *chef’s kiss*. I know everyone has a soft spot for their mother’ food and I can’t disagree with that. However, today I want to share this amazing recipe with you all! This blog is going to show you how to make aloo fry/potato fry from scratch. What is Aloo fry?

Aloo fry is an Indian side dish that can be served with almost anything. I love having it with Kitchri Kurri (a yoghurt based curry), with roti and even by itself sometimes. The potatoes are prepared and then cut into cubes. Thereafter, they are seasoned with spices and fried in a shallow oil, it is really that easy!

This recipe is done by so many and over the years I have developed this recipe according to my tastes. There is no right or wrong way to make it, you can add and leave out ingredients as you wish. Having IBS, I do understand that not everyone can tolerate things like garlic and chilli, so if you need to omit that for your health, go for it.

What do I need to make this recipe?

I made this recipe for two people to share, however, you can double or triple it if you like. Make sure you have medium sides potatoes, and prepare and clean them very well. You will need vegetable oil to fry the potatoes, I have not tried other oils for this recipe. you don’t need a lot of oil at all and you can strain off the excess. A variety of spices are needed for this dish so make sure you have them on hand before starting the recipe. I always like to add free coriander to mine when they are done, this is all optional. As a side dish, this a very easy recipe to make and does not take a lot of time to finish.

Ingredients

  • 2 medium sized potatoes

  • 3 tbsp. vegetable oil

  • 1 tsp. mustard seeds

  • 1/2 tsp. cumin seeds

  • 1/3 tp. turmeric

  • 2 crushed garlic cloves/1 tsp. garlic masala

  • 1/3 tsp. chilli powder

  • 5 curry leaves

  • 2 tsp. salt- taste to make sure

  • 1-2 green chillies

Directions

  • Peel and wash potatoes. Make sure to soak them in water once peeled for 15 minutes, cube them and then let them sit in water again for another 15 minutes. Dry them off and set aside for now.
  • Add vegetable oil to a medium heat pan.
  • Add in the mustard seeds and cumin seeds and when they start popping add in the garlic or garlic masala and mix to combine.
  • Add in the cubed potatoes and mix.
  • After 10 minutes add in the turmeric and chilli powder.
  • Mix and fry them for about 5 minutes.
  • Then add in the curry leaves and mix for another 5 minutes.
  • Once the potatoes are soft, add salt to taste.
  • For them to soft, make sure to fry them on a low to medium heat.
  • Add in chillies at the end.
  • Strain the aloo fry and enjoy!
