Easy Butter Chicken Recipe
I’ve only been married for a little while and before that, I was very simple in the kitchen. I always loved to bake, which is testament to this blog, but curries were a different story. My cooking journey started off by learning the basics and slowly developed my own cooking style. I used to follow recipes to the “T” but now, I like to freelance in the kitchen. This delicious and easy butter chicken recipe is one that really gave me confidence. It is a two part process, but it does save so much time for all of us who are working. Tips on how to make this easy dinner recipe
- For this recipe I like to use about 2-3 chicken breasts, cut into cubes. You can use more if you are cooking for a larger group, just remember to double up on the ingredients.
- I love using full fat yoghurt for this recipe but you can use fat free or lactose free yoghurt.
- Fresh ingredients are the best to really get the flavours into the chicken.
- I would suggest using fresh spices and don’t skip on the butter and oil combination.
- The chicken can be left to marinate for at least 20-30 minutes so the flavours can really absorb. If I am having a busy day, I like to prepare the chicken in the morning and complete it when I am ready to eat.
- This delicious and easy butter chicken recipe can be served with rice or roti. I like to have roti for this dish but it is totally up to you.
Delicious and Easy Butter Chicken Recipe

minutesThis is my favourite recipe to make when I am in a rush but still crave something wholesome and flavourful. This delicious and easy butter chicken recipe can be adapted to your liking but it is probably something you will be making for years to come!
Ingredients
- Butter Chicken Marinade
3 chicken breasts, cubed
1 1/2 cups plain full fat yoghurt
1 tbsp. minced garlic
1 tbsp. minced ginger
2 tsp. Garam Masala
1 tsp. turmeric
1 tsp. cumin powder
1/2 tsp. coriander powder
1 tsp. chili powder
1 tsp. salt
1 tbsp. olive oil
1 tbsp. butter
- For the sauce
1 tbsp. olive oil
2 tbsp. butter
1/2 onion, diced
1 tsp. garlic
1/2 tsp. ginger
1 1/2 tsp. cumin powder
1 tsp. coriander powder
1 tsp. chili flakes
250g diced tomatoes-canned
Salt to taste
1 cup of whipping cream or coconut milk
1 tbsp. sugar (to cut the acidity of the tomatoes)
Diced parsley/coriander when the butter chicken is done
Directions
- Marinade
- Add all the ingredients to a bowl, except the oil and butter, mix well with the yoghurt.
- Cover with cling film or foil and place in the fridge for 30 minutes to 3 hours.
- In a pan, melt the olive oil and butter and add in the chicken.
- Once the chicken is golden brown (it doesn’t need to be fully cooked now), remove from the heat and set aside to rest.
- Sauce
- Melt the butter and olive oil, add in the garlic, ginger and onions and allow onions to become translucent.
- Then add in the spices and stir for a few seconds until it becomes fragrant.
- Now add in the tomatoes and stir for 10 minutes on a low heat.
- Blend the sauce using a hand blender until smooth.
- Set the heat to medium-low and add in the chicken and stir well.
- Now add in the cream or coconut milk and sugar and salt to taste.
- Allow it to simmer on a low heat for 10 more minutes so the chicken can fully cook.
- Serve with coriander on top and with rice or roti.
