Happy Monday Fam!
I am bringing you all the cozy and warm feels today with these freshly baked apple cider donuts. Baking donuts is calming and therapeutic for me, I find it so relaxing. Apple cider donuts have a sweet and light crumb to them, that I think we all love. I usually have apple cider vinegar in the mornings so I am quite used to the taste. But I think for many it may seem like they will have a sour taste to them, much like the vinegar, but in actual fact they provide a warm and comforting aura. As well as gorgeous hints of spices wafting through.
This baked apple cider donut recipe is actually a wonderful base to use for when you want baked donuts. I say that because you can add any frosting to them. In this case I just used the traditional cinnamon sugar, which pairs very well. Baking these throughout the year should be a MUST as they are so easy to make. I try to not limit myself to making these in December only.
How to store baked apple cider donuts:
After the donuts have been baked, remove from the oven and allow to cool down completely. If you do not wish to have them all right away, don’t coat them and place them in a Ziploc/freezer bag. This will keep them fresh and you can leave them in the fridge for up to 4 days or freeze for 2 weeksOnce you remove them from the freeze, pop them into the oven for 10 minutes at 200 degrees C.
When they have defrosted, make the coconut oil mixture and dip and then coat with anything you like.
Bon appetit and enjoy them,

1 cup apple cider vinegar
2 star aniseed
2 cardamom pods
1 cinnamon stick
2 cup plain flour
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 1/2 tbsp melted butter
1 egg
3/4 cup whole milk
1/2 cup brown sugar
1/3 cup white granulated sugar
1 tsp. cinnamon powder
1/2 tsp. nutmeg powder
1/2 tsp. cardamom powder
- Topping
1/2 cup melted coconut oil
1/3 cup granulated sugar
1/2 tsp. cinnamon powder
Directions
- Spray non-stick cooking spray on your donut tin and set aside.
- In a small pot, bring the apple cider vinegar, cinnamon stick, cardamom pods and star aniseed to a boil. Once the apple cider vinegar has boiled down to about 1/2 a cup, remove from the heat and set aside.
- Preheat your oven to 180 degrees C.
- In a medium sized bowl combine your flour, baking soda, baking powder, cinnamon powder, nutmeg powder, salt and cardamom powder and give it a good whisk to combine everything.
- Then in another bowl whisk the egg, melted butter, sugars and milk together. Add this to the dry ingredients using a spatula or wooden spoon and then add in the apple cider reduction.
- Once everything is combined (do not over mix), pipe into the donut tray and bake for 11-13 minutes. Once the tops are nicely browned, you can remove form the oven and allow to cool.
- Once the donut has rested at room temperature for 20 minutes, dip the baked donut into the coconut oil and then dip it into the sugar and cinnamon and enjoy!
