Delicious Baked Chai Donuts

I am such a fan of baked donuts, they aren’t fried and they’re less hassle. I think the oiliness of some fried donuts does ruin the taste for me, but these are on another level! These gluten free chai donuts are packed with so much flavour and love! I love all things Fall, but my best flavour for Fall has to be Chai. I had to incorporate these gluten free chai donuts into the Fall recipes coming out in the next few weeks. Chai spice comes from India, and the Chai spice I used is from a Masala Chai tea. However, I have written down my favourite chai recipe for you, incase you don’t have access to it.

What the flavour of these gluten free chai donuts?

Chai is a very specific spice that is very widely used around the world. It originated in India, and is very commonly used in tea a.k.a masala tea. Masala tea is by far my favourite type of tea to make. It brings a sense of home and coziness and who doesn’t love that?! The flavour is a little bit spicy and very flavourful, the warmer tones of spices come through in masala chai tea. The gluten free chai donuts have the chai spice in the donut itself and in the coating as well.

Ingredients for these Chai Donuts?

Flours: I used a combination of gluten free flour and oat flour for the donuts. The oat flour gives them that cake-like texture. While the GF flour (containing Xanthan Gum) helps to bind the ingredient together.

Banana: I used 1 large banana for this recipe but you can use 1 1/2 medium sized ones. When they have dark brown specks, that’s when they are ripe enough and will give a natural sweetness to the recipe.

Chai Tea: If you don’t have chai tea, don’t worry! You can use any tea you like, add the spices listed below and allow it to brew. Then strain out the tea to remove the left over bits and use it in the recipe.

If you’re looking for a flavourful donut, these gluten free chai donuts are full of flavour. These baked donuts are light and fluffy and topped with a light, chai frosting as well.

Ingredients

  • Chai Donuts
  • 1/2 cup brewed chai tea, allow to cool

  • 1 1/2 cup all purpose gluten free flour

  • 1/2 oat flour

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp. ground cardamom

  • 1/3 tsp. ground ginger

  • 2 tsp baking powder

  • 3/4 tsp baking soda

  • 1/2 cup brown sugar

  • 3 eggs, large

  • 1/4 cup mashed banana

  • 2 tsp vanilla extract

  • Chai frosting
  • 1 1/2 cups icing sugar

  • 3-5 tbsp. chai tai-cooled

  • 1/2 tsp. vanilla extract

Directions

  • Chai Donuts
  • Preheat your oven to 175C and prepare your donut tray. Spray it with a non-stick spray and set aside.
  • Brew your chai tea and set aside and allow it to cool.
  • In a large bowl, whisk together the GF flour, oat flour, spices, baking soda and baking powder. Once combined, set aside.
  • In another bowl, whisk the eggs together, then add in the vanilla extract and mashed banana and mix well.
  • Add in the dry ingredients to the wet and whisk to combine.
  • Pipe the batter into the prepared donut tray, fill about 3/4 fo the way full. Tap the tray on a hard surface to remove the air bubbles and bake for 16-18 minutes. Once the tops look golden brown, remove from the oven and allow to cool.
  • Chai Frosting
  • Sift the icing sugar to remove the lumps.
  • Whisk in the rest of the ingredients until you reach a smooth and fairly thick consistency.
  • If you want a runnier frosting, add more tea*
  • Dip the donuts into the frosting and enjoy!

Notes

  • *You can also add more or less icing sugar to control the consistency you want.
